“Ma Dang Gook Sooo”

My grandmother, or halmoni,, used to say that I was a true Korean because I enjoyed the smell of kimchi. The same aroma that school kids would exclaim in disgust at, I would actively seek out by opening the fridge door and breathing deeply, enjoying the pungent scent of the fermented cabbage. At mealtimes, each bite was paired with an equally large mouthful of kimchi, pure joy in my eyes as I crunched down on each piece, delightfully savoring the spicy, umami, and slightly sweet tang of kimchi.

So needless to say, walking into Ma Dang Gook Soo and seeing large jars of homemade kimchi piled up high brought the same giddy excitement of my childhood right back. Accompanying the jugs of kimchi were boxes of Korean sweet potatoes and Daechu (jujube/Korean red date). 

You’re not given an individual menu, but there’s a small strip of photos depicting each dish lining the perimeter of the ceiling. There’s an air of expectation to not need a menu at all; simply, just tell one of the Korean aunties what classic dish you want and you’ll find it in front of you within ten or fifteen minutes, along with their freshly cut kimchi and pickled daikon.

I am typically preferential to bibimbap loaded with the rich flavor of a grilled protein and comes in a hot stone pot. Ma Dang Gook Soo bibimbap, on the other hand, came simply in a large metal bowl and with a modest portion of ground meat; yet I found myself unable to stop going for bite after bite, enjoying the perfect cook of each vegetable with a clean sesame flavor and mixed with rice and the sweet, spicy, and savory gochujang sauce. There was no need for an overpowering flavor, rather, each ingredient played a role in harmonizing together as the perfect bibimbap should.

Their bibim-naemyeong and chicken kalguksu were just as satisfying, with both noodle dishes having a well rounded flavor. All three dishes were cooked simply, yet with a care and love that permeated through each ingredient and every bite, leaving the comforting flavors lingering both on the tongue and in the heart and mind. 

Our verdict:

If you trust locals over virality, Ma Dang Gook Soo should be your next stop for classic and comforting Korean dishes. Surround yourself with local Koreans in the area, immerse yourself in a big metal bowl of pure comfort, and pick up a jug of kimchi on your way out.
